If you’re craving something flavorful but not too heavy, this Yuzu Kosho Mazemen is the perfect dish. Unlike traditional ramen, mazemen is a brothless noodle dish— kind of like pasta. Instead, the noodles are tossed in a rich, concentrated sauce that clings to every bite. It’s fast, comforting, and full of flavor.

This version is made for the lemon and citrus lovers out there: creamy, zesty, garlicky, and with a spicy kick thanks to yuzu kosho—a Japanese condiment made from fermented chilis, yuzu citrus peel, and salt. Butter and cheese bring richness, while fresh lemon juice adds a bright, clean finish.

This recipe is for one serving. To make two servings, double the ingredients.

Prepare the Sauce

  1. In a bowl, add your lemon zest, lemon juice, and yuzu kosho and mix. Set aside once prepared.
  2. In a saucepan over medium-low heat, melt butter and sauté the garlic until the garlic is fragrant.
  3. Remove from the heat and add the lemon yuzu kosho mixture to the butter sauce and mix until everything is incorporated. Once combined, set aside.

Cook the Noodles

  1. Bring a pot of water to a boil and cook the noodles according to package directions. Once done, drain and set aside. (Reserve a tablespoon of noodle water to loosen the sauce if needed.)

Toss the Noodles

  1. In a bowl, add the prepared noodles, sauce, green onions, and cheese. Mix until the noodles are evenly coated and glossy. If the sauce is too thick, add the reserved noodle water.

Assemble

  1. Carefully transfer to a bowl and top with lemon zest, green onions, yuzu kosho, or cheese. Slurp and enjoy!
