Heat a large pan over medium heat. Add oil and sauté garlic and ground pork; until browned. Combine chipotle sauce and mix until well combined. Remove from heat and set aside.
Open one packet of Sun Noodle Ramen noodles and gently loosen the noodles. Bring 7 cups of water to a boil and cook for 1 minute and 30 seconds.
After the noodles are finished cooking, strain and toss noodles in the prepared sauce; until well combined.
Transfer noodles in a separate serving bowl. Garnish with coriander, Mexican cheese, red onions, sweet corn, jalapeno, and grape tomatoes.
