In a pan over medium-high heat, sauté the pork belly and vegetables in oil until they are browned. Then, reduce the heat to medium-low.
In a separate pot, bring water to a boil and cook the noodles for 30 seconds. Afterward, drain the noodles and rinse them quickly under cold water.
Raise the heat to medium, add the drained noodles to the pan with the sautéed ingredients, and mix well. Drizzle in additional oil to prevent sticking.
Pour the prepared sauce over the noodles and sautéed ingredients, mixing everything until well coated. Once combined, turn off the heat.
Garnish with green onions and optional beni shoga, if desired.
