Directions:
Preparing the Shrimp Oil
- Add dried shrimp or shells, green onions, and ginger to the oil, cooking on low for 10-12 minutes.
- When the oil has turned an orange-red color, strain it into a container and let it cool.
Preparing the Shrimp Flavored Tenkasu
- Blend dried shrimp and tenkasu (tempura crisp) in a blender. Set aside once done.
Assemble
- Bring a pot of water to a boil and gently loosen the ramen noodles. Cook the noodles for 1 minute and 30 seconds to 2 minutes until al dente.
- In a bowl, combine the stock with shrimp paste and miso soup base, then add shrimp oil for extra flavor.
- Transfer the cooked noodles to the bowl and top with more shrimp oil, tenkasu, and optional toppings like bean sprouts, boiled shrimp, a boiled egg, or chashu. Enjoy!
