Shrimp miso ramen boasts a savory miso base with delicate shrimp flavors, offering satisfying umami richness. Paired with our popular thin wavy noodles, it’s a delightful combination.

Directions:

Preparing the Shrimp Oil

  1. Add dried shrimp or shells, green onions, and ginger to the oil, cooking on low for 10-12 minutes.
  2. When the oil has turned an orange-red color, strain it into a container and let it cool.

Preparing the Shrimp Flavored Tenkasu

  1. Blend dried shrimp and tenkasu (tempura crisp) in a blender. Set aside once done.

Assemble

  1. Bring a pot of water to a boil and gently loosen the ramen noodles. Cook the noodles for 1 minute and 30 seconds to 2 minutes until al dente.
  2. In a bowl, combine the stock with shrimp paste and miso soup base, then add shrimp oil for extra flavor.
  3. Transfer the cooked noodles to the bowl and top with more shrimp oil, tenkasu, and optional toppings like bean sprouts, boiled shrimp, a boiled egg, or chashu. Enjoy!
