Hawaii-Style Cake Noodle

In Hawaii, Cake Noodle is inspired by a Chinese dish known as Gau Gee Mein. This dish features noodles that are cooked to achieve a soft inside and a crispy outside, resulting in a cake-like texture. Typically, the noodles are briefly boiled before being pan-fried, and they can be served plain or with a variety of sauces and toppings. It's a hearty and filling comfort food that is truly "ʻonolicious."

Ingredients:

  • 1 package Sun Noodle Shio Ramen kit

Stir Fry Ingredients:

  • 8 tbsp oil, divided (as needed)
  • ½ lb. Protein of choice (beef, shrimp, chicken, etc.)
  • ½ Carrot, peeled and sliced
  • 2 Bok Choy, sliced
  • ½ Onion, sliced
  • 2 Shiitake mushrooms, sliced
  • Bamboo Shoots, sliced
  • Baby Corn, sliced
  • 1 clove of Garlic, minced
  • White Pepper, to taste
  • ½ Stalk Green Onions, sliced (for garnish)

Sauce:

  • 1 package Sun Noodle Shio Soup Base
  • 1 cup Water
  • 1 tbsp Cornstarch

Cooking Instructions

Sauce

1. In a bowl, combine one Shio soup base, water, and cornstarch. Mix well and set aside.

Stir-Frying

2. Heat approximately 3 tablespoons of oil in a large pan over medium-high heat. When the pan starts to lightly smoke, add the stir-fry ingredients and white pepper. Cook until the protein is browned and the vegetables are tender.

3. In the same pan, reduce the heat to medium and combine the stir-fried ingredients with the prepared sauce. Continue cooking until the sauce thickens to a gravy-like consistency, stirring occasionally. Once thickened, remove from the heat and set aside.

Boiling Noodles

4. Remove one serving of noodles from the package and gently separate them. In a pot, bring water to a boil and cook the noodles for 1 minute. After cooking, strain the noodles and mold them into a circular shape.

Pan-Frying Noodle

5. Heat a separate pan over medium to medium-high heat. Add the remaining oil and allow it to heat until it starts to lightly smoke. Then, place the shaped noodles into the hot pan.

6. Press and fry the noodles constantly until they are golden brown on one side. Carefully flip the noodles to fry the other side until crispy, adding more oil if needed.

7. Once the noodles are golden brown, transfer them to a cutting board and cut them into squares.

Serving

8. Plate the noodles and pour the sauce over them. Garnish with green onions. Serve hot and enjoy!
